I know my posted menus have been sporadic lately, but I do actually still create them. I just don't always get them posted. Since I'm only cooking for two, I usually cook about three meals on Sundays, and then the hubby and I eat on that all week. We actually do a pretty regular date night now that we are empty nesters, and treat ourselves to dinner out once a week as well.

My best menu news is that my son has taken up my menu planning habits now that he is in an apartment at college, and believe it or not, he cooks! He has followed my Sunday cooking tradition, and cooks a few things for himself that he can eat all week. My favorite thing is that he texts me photos of his meals. I love that kid! Some girl is going to be very lucky some day to snag that boy. :) Can you tell I'm a proud mom?

Fall is definitely in the air. After a very hot start to the school year, temperatures are finally hinting at the change of season. Eric and I took advantage of a free weekend with cooler temps to do our first try at camping with our motorcycle! The man we bought our original bike from let us borrow his motorcycle camper, and it was fabulous. It was so much better than camping in our tent, and we really enjoyed traveling to the campground on our motorcycle.


Now, on to the menu. Remember, now that it is just the two of us, my menus are much less detailed. We eat a lot of leftovers so that we don't waste food, plus it saves us time on busy nights. Usually one meal will last a couple of days. So, instead of listing my meals by day like I've done in the past, I'm just sharing what I will be cooking during the week and labeling it by the type of entree. Hopefully it is still helpful in providing you ideas for meals to make for your family.

Beef - Taco Salad (reminder to myself to cook the shells at 400 degrees for 5-7 minutes), Apple slices

Those of you who regularly read my blog are probably thinking I've fallen of the face of the earth. Not so! I still plan my meals for the week and cook for my family (now just me and my hubby). But, since my son went to college, my schedule and meal planning have changed a little. Just over a year ago, my husband and I got a motorcycle, and it has kind of changed our world. We are just slightly obsessed with riding, and go out every chance we get. We still love to hike and such, but we just take the motorcycle now as our way of travel. So, my weekends haven't left me with as much time to blog.

But, I couldn't sleep tonight, so I thought I'd post my menu for this week. Most things are new recipes, so I'll post photos later once I've made the recipe. I'm not going to specify days, as we eat leftovers a lot since there are just two of us at home now, but here are my meals for the week. March definitely came in like a lion in Southwest Missouri. Saturday was actually a beautiful day, with a high of 53. Starting on Saturday night, we had thunder sleet (yes, there really is such a thing) until early Sunday morning, and then continued to have sleet all day, giving us about 3 inches of sleet cover on the ground. Sunday night, a huge band of snow came through, adding about 6 inches of snow on top, which then blew and drifted all over the place. Crazy! So, I am now at snow day #14 for the school year. At least I will have plenty of time to cook today. :)

I have a new pasta recipe I'm trying today (Mom, this would work for your meatless Friday - I do meatless on Monday). We'll see how it goes. Luckily, I have leftovers in the fridge from last night if it turns out bad. ;)

It felt like spring arrived in the Ozarks the Saturday, so the hubby and I took advantage of the warmth and went for a motorcycle ride and hike to Withrow Springs, Arkansas. It was wonderful to be outside again. Unfortunately, winter is back again this week, but such is the weather in Southwest Missouri. You definitely never get bored. :)



My meals this week will be pretty simple, but I do have them planned. I'm following a pretty simple method for meal planning now that Corey is gone. I basically plan around the main dish. Here is basically what I do:

Sunday - Beef
Monday - Meatless
Tuesday - Pork
Wednesday - Chicken
Thursday - Fish
Friday - Date Night (This doesn't mean we go out, it just means I don't cook. :) We often do takeout or eat soup and sandwiches. )
Saturday - Leftovers or homemade pizza - we do lots of hiking and riding on the weekends, so I try to keep Saturday simple.

It looks like we are finally coming out of the deep freeze in southwest MO. The long-term forecast has us in the 50s and 60s for much of the week. I will take that for a birthday present. :) I've got a couple of grilling days on the menu to celebrate the warm weather.

Yes, believe it or not, I'm actually posting a menu this week. I haven't kept up with public posting of my meal plans very well since my son went off to college this fall. I'm still planning and feeding me and my hubby, but we often just grill some meat and have veggies and a salad, so I don't really have recipes to share. I couldn't sleep last night, so I had some extra time on my hands and decided to throw some new recipes into the mix for the week. I will post pictures after I make the meals. :)

Now that we are empty nesters, I've noticed that we've changed our eating habits a bit. I will make a meal, and we will eat that same thing for a couple of days. Both of us love leftovers, so it never bothers us, and it makes it easier to eat at home instead of eating out when you know you have food ready to reheat as soon as you get home. So, this week, instead of posting the days we will be eating certain things, I'm just going to post the meals I plan to make. Some things will just be grilled items, so they will not have a recipe attached. Feel free to mix and match as you please. ;)

It was another great fall weekend, and it was made even better by the fact that Corey came for a visit. We were supposed to go to MU to visit him for parents weekend, but it actually worked out better for all for him to come home. We did our yearly apple pie baking and delivered them to the neighbors, which is always a lot of fun.



We even snuck in a short motorcycle ride after Corey went back to school.

What a wonderful fall weekend! Cooler temperatures finally reached the Ozarks, and the weekend was perfect - lows in the 50s and highs in the mid 70s. Eric and I rode the motorcycle about 600 miles this weekend and saw some amazing sights.

This week the cooler temperatures are supposed to continue, so I made a big pot of chili to during the week. I also made some Bacon Cheeseburger soup for lunches.

Yes, I realize I haven't a posted a menu plan since my son left for college mid-August. I've been adjusting to life as an empty-nester. ;) The hubby and I have been saving for our "fun vehicle" for a while now, not really knowing what we wanted - a camper, a jeep, etc. We just knew that once our kiddo went off to school, we wanted to have a new hobby. Well, we finally settled on "Big Red" - a 2003 Honda Goldwing!

(And no, I did NOT go riding in shorts and tennis shoes - I wore jeans, boots, a jacket and gloves - I'm a safety girl!) Yes, I realize it's a grandpa motorcycle, but it fits our personalities and lifestyle perfectly! So instead of blogging, I've been hitting the open road with my hubby. :)

I really am still cooking, so I do have a meal plan for you. Now that there are just two of us, you will see that we are eating leftovers more often, and every Friday, it's date night so I don't cook. :) Here's what I have on the menu this week. I'm back! I've had several people message me asking if I stopped blogging, and no, I did not. :) As I've mentioned a couple of times this summer, my son is leaving for college for the first time, and I've been trying to spend as much time with him as possible. Also, my school reconfigured our buildings, and I had to move to a new library, so I have spent the last three weeks trying to set up my library collection.

Never fear, I have been planning meals for my family! I just haven't taken the time to post them. I figure I have over 5 years worth of menus and recipes posted that my readers can refer to for ideas. ;)
