This was a wonderful chicken recipe that I made on a night that my non-vegetable eating son was gone. ;) It is a company-worthy recipe that will make it into my regular rotation.



FOR THE CREAMED SPINACH:
1 large bag of spinach leaves
2 ounces reduced fat cream cheese
1/8 C shredded parmesan cheese
2 cloves garlic, minced
3 T onion, minced
olive oil in a mister bottle
Salt and pepper to taste
FOR THE SAUTEED MUSHROOMS:
8 ounce package of mushrooms, sliced
1 T butter
olive oil in mister bottle
1/2 C white wine
2 cloves garlic, minced
Salt and pepper to taste
FOR THE CHICKEN:
4 boneless chicken breasts, sliced in half horizontally to make 8 thinner breast portions
2 oz slices shredded Mozzarella
garlic powder
seasoned salt
pepper
Preheat the oven to 350 degrees.  Spray a 9 x 13 baking dish with no-stick spray. Sprinkle the garlic powder, seasoned salt, and pepper on both sides of the chicken.  Bake for 16 minutes.
Meanwhile, make the creamed spinach.  Spray a non-stick skillet with olive oil. Over medium-high heat, saute the onions for 2-3 minutes.  Add in the spinach and garlic.  It will shrink drastically.  When it's cooked through, stir in the cream cheese and parmesan cheese.  Continue cooking and stirring until the cream cheese is melted.  Remove from heat.
For the mushrooms, spray a skillet with olive oil. Melt the butter, and add the mushrooms in and cook until browned all over.  Deglaze the pan with the wine.  Add in the garlic and season with salt and pepper.  Cook until most of the wine is cooked out.
Flip the chicken pieces over.  Divide the spinach and mushrooms over the top of each breast. Sprinkle the mozzarella over each piece of chicken.  Cook another 15 minutes or until cheese is browned and chicken is done.

Happy Palm Sunday! Even though it is officially spring, we in southwest Missouri are facing a second blast of winter. We ended up with a snow day from school last Friday, and got 4 inches of snow - our biggest this year! It snowed again all day today, but the temps were just warm enough that it didn't stick to the ground.

Monday - Baked Ravioli (place 1 pkg. frozen ravioli in the bottom of a 9x13 pan, cover with a jar of pasta sauce, and top with mozarella, bake covered at 400 for 30 minutes, remove foil and cook for 10 more min.), Broccoli, Salad, Peaches

Tuesday -Spinach and Mushroom Smothered Chicken (new), Roasted Asparagus, Salad, Strawberries

Wednesday - Eat out

Thursday - Corey's birthday - his choice, just waiting for him to make his decision :)

Friday - Ricotta Stuffed Meatballs, Broccoli, Salad, Strawberries

Saturday - Eat at Mom's house for Easter/Corey birthday

Happy St. Patrick's Day (and last day of spring break)! We don't really do anything to celebrate this holiday at our house, but it's fun seeing photos on Facebook of those who do. I often make corned beef and cabbage on St. Patrick's Day, but because it's not a favorite of my son, I'm skipping it this year. We start back to school tomorrow, so I'm keeping my menu pretty simple. You'll see lots of grilling again (which requires no recipes) and some easy casserole options.

This week is our spring break, and we've been busy taking our son to college scholarship interviews. It's hard to believe that very soon he will be an adult in college! With all of our travel and activity this week, I planned a very easy menu to make sure we would eat well, but oops! I forgot to go post it.



This week is Grilling Week at our house. No fancy recipes - just making sure that we have meat thawed and ready to go on the grill each night. I love grilling and how easy it makes getting dinner on the table. All you have to do is grill up your favorite meat, throw together a salad, heat up some frozen or canned veggies, and cut up some fresh fruit (and of course, canned works in a pinch).

Sunday - Eat out (got back too late from interview)

Monday - Grilled Burgers (make patties from lean ground sirloin and just season with pepper and garlic and throw on the grill), Green Beans, Salad, Strawberries

Tuesday - Grilled Turkey Brats (just throw them straight on the grill - no seasoning necessary), Green Beans, Salad, Blackberries
Wednesday - Grilled Chicken Breasts (marinate for 30 minutes in Kraft Sundried Tomato Dressing
and grill), Broccoli, Salad, Strawberries

Thursday - Grilled Pork Tenderloin (slice into 3/4 inch slices, season with pepper and and garlic powder, marinate in Sundried Tomato Dressing, and grill), Asparagus, Salad, Strawberries
Friday - Grilled Hot Dogs (cook on a stick on the fire pit - fun!), Baked Beans, Salad, Strawberries

Saturday - Grilled Steak (season with pepper and garlic powder, marinate in Sundried Tomato Dressing, and grill), Green Beans, Salad, Strawberries
