Beef Porcupine Balls

These were a very tasty alternative to traditional porcupine meatballs made with regular rice. The Rice-a-Roni gives it a great flavor.

Ingredients
1 pkg. beef Rice-a-roni
1 lb. ground beef
1 egg, beaten
2 1/2 c. hot water


Directions
Mix together ground beef, Rice-a-roni and egg. Shape into small balls. Brown on all sides in skillet. Combine contents of beef seasoning packet with hot water. Pour over meat. Cover and simmer 30 minutes. Thicken gravy if desired.

I make this for my family but just make regular meatballs and put them in the rice o roni and we LOVE IT!!! i never thought of putting the rice in with it

These looked really good. I made them as directed but my gravy started to dry up when I was cooking it so I had to add a can of cream of mushroom soup. But overall I would make these again..very tasty!

Boy do these meatballs look good! I had wondered what size box of beef rice-a-roni to use to make the meatballs, as I noticed the store has 2 different sizes, so I checked the rice-a-roni website to see if the recipe was posted there.

I also noticed the website states to make the meatballs 1-1/4 inch in size. I might opt to bake my meatballs in the oven rather than brown them in the skillet, as that's pretty much how I make all meatballs I use in recipes.
