Menu Plan Monday - Looking for new appetizer
What do you do for dinners when your family is going to be gone or home late every evening this week? Rely on the freezer! Our menu won't be very exciting this week, but it still shows you that menu planning can help save you time and money even if you have an excessively busy schedule.
Last week I didn't post much, but I did want to share a sneak peek of our family photos. One of our former students is now a photographer, and does great work.
This week is full of computer workshops, doctor visits, work travel, book clubs, etc. I promise I will get back to trying new dishes and posting some of my favorites like usual, but this week you get to see yet another example of what we do when I'm desperate.
Also, I'm looking for a new appetizer recipe. I have to bring an appetizer to my ladies' book club meeting, so I was hoping someone might have a fun recipe to share. :) Let me know if you have a great one!

Sunday -Chicken Alfredo (Stouffers), Broccoli & Cauliflower, Salad
Monday -Comforting Chicken Noodle Soup (from freezer), Salad
Tuesday - BBQ Pork (from freezer) Baked Potatoes, Green Beans, Peaches
Wednesday -Leftovers
Thursday -Eat at book club
Friday - Homemade Pizza, Salad
Saturday -Sausage Potato Soup, Salad, Garlic Muffins

Your menu looks great!
I've got two recipes to share and both are HUGE hits.
Pizza dip
2 blocks cream cheese
1 jar pizza sauce
1 package pepperoni
1 package pizza cheese
1 bag of fritos scoops
Spread cream cheese into a 8X8 pan, spread pizza sauce on top, spread pepperoni out across sauce, and then top with cheese.
Place in over @ 325 for 30 minutes or until everything is heated through and cheese has melted.
Serve with scoop Fritos.
Now your sauce and cheese amounts vary...I usually load mine up and make it real thick some others don't add as much.
My second one is Party Bread.
1 lb ground sausage
1 lb hamburger
3/4 block velveeta cheese
1 loaf rye party bread
Fry hamburger and sausage up and mix together. Melt velveeta chese and miss together with meats. Spread onto bread and put in oven @ 375 for 15 minutes.
These are both awesome for any type of get together!

Here are three ideas:
White Pizza Dip
1 envelope Lipton Savory Herb with Garlic soup mix
8 oz reduced fat sour cream (1 cup)
8 oz part-skim ricotta (1 cup)
4 oz shredded part-skim mozzarella (1 cup)
1 oz turkey pepperoni, chopped (1/4 cup)
1 loaf Italian or Fr. bread, sliced
Preheat oven to 350F. In 1-qt. greased casserole dish, mix all ingredients, reserving about 1/4 cup mozzarella for top. Sprinkle reserved cheese on top. Bake 1/2 hr. Serve with bread or plain crackers. Makes about 2 c. dip.
Buffalo Chicken dip
16 oz cream cheese, softened
1/2 cup ranch dressing
1/2 cup blue cheese dressing (Roka)
1/2 cup Frank's red hot sauce
2 cups diced cooked chicken
2 cups (8 oz) shredded sharp cheddar
Mix first 5 ingredients and spread in 13x9 pan; sprinkle with cheddar. Bake at 350F for 30-35 mins. until bubbly. Serve with tostitos scoops and celery and carrot sticks of course.
Tomato Bacon cups
1 small ripe tomato, finely chopped
1/2 cup mayonnaise
1/2 cup real bacon bits (Hormel in bag)
1/2 cup shredded Swiss cheese
1 small onion, finely chopped
1/2 tsp. dried basil leaves
12 oz tube refrigerated buttermilk biscuits,separated into 10 biscuits
(NOT Grands)
Preheat oven to 450. Mix 1st 6 ingredients together. Split each biscuit into 3 layers; press one layer into an ungreased miniature muffin cup. Spoon filling into cups. Bake 8 to 10 mins until golden. Serve warm or at room temp. Makes 2 1/2 dozen.
Let me know if you need more ideas. I also have a chocolate chip cheese ball served with graham crackers as well as veggie pizza squares made with crescent rolls that are very good.
